Three former pupils of San Silvestre, first cousins Ariana, Thais and Alexia (2003, 2004 and 2006), two of them administrators and the other an economist, are the founders of Quinoa Café, the first Peruvian chain of healthy food cafés-restaurants that forms part of Endeavor, a global organization of high-impact entrepreneurship, which will close 2018 with 7 stores in Lima.
“The school has greatly influenced who we are and what we have achieved as entrepreneurs so far. We have grown up in an environment that promotes healthy competition, where we were constantly encouraged to want to do our very best. This has helped us to keep on working and playing a leading role in the field, as well as to continue improving every day.
San Silvestre also gave us the structure to develop our organization skills and taught us to work as a team. This has been vital for our type of business, because Quinoa never rests, so knowing how to delegate is fundamental.
The values we acquired at school have also influenced our objective as a business. Not only do we sell food, but we are also a brand with a purpose: we promote female empowerment (70% of our employees are female heads of household), which is something we value very much. We also promote environmental care through different initiatives."
